The new feature on Around The Town with Al Bresloff is that on the 4th Sunday of each month, the show will be visited by the owner of “delightful pastries” a bakery and pastry shop that has been serving Chicagoland for a quarter of a century. But they are more than a bakery & pastry shop, so each month, Dobra will talk about specific recipes or holidays and how to best prepare for them.

Escarole and Bean Soup
2 quarts of chicken stock(if you want to make it vegan use vegetable stock)
1 TBL olive oil
2 onions, finely diced
4 garlic cloves, finely diced
Salt & pepper to taste
¼ tsp Aleppo chili pepper (or more if you like it spicy)1 can cannellini beans, rinsed well
1 escarole, well washed and chopped into large pieces
Sauté onion with salt and pepper till lightly brown about 7 minutes.
Add garlic and Aleppo pepper and sauté till fragrant add broth and bring to a boil.
Throw in the beans and taste for salt and pepper and bring to a boil again.
Add the escarole and let it cook only for a few minutes and turn off the heat.
Check for salt and pepper again then serve with a swig of extra virgin olive oil
or if you want it to be extra fancy shredded parmesan and fresh herbs.
