Filet Medallions from Purely Meat

Highly Recommended***** On today’s show, WCPT820 at 2 p.m., Frank and I had a discussion about some great steaks that I was “doing” from Purely Meat in Chicago. We have a big package of these fillets that are 2-3 ounces each, five per packet. Since we have a week before the family gathers for the BBQ, I decided to do some for Jane and I tonight. Under most circumstances, we would marinate for hours, but instead, we just added some seasoning, lit up the grill and went at it. Each packet contains five juicy tender filets. Please note there were ten total. Each one had some BBQ sauce, and each time they were turned, I continued to add sauce. We love “Sweet Ray’s” but any sauce will work.

While they are small, the are also tall, so the trick to doing a filet is the constant turning. This allows the juices to flow, the inside to cook and yet not burn.  The ten steaks took about 25 minutes ( while our potatoes were being done in an air-fryer) and were perfect.
