“Eat and Evolve”

On Sunday, 10, 15, I spoke with Sebastian White on the radio (WCPT820, a copy of which is available at LIVE Radio) about their fundraiser called “Eat and Evolve II” which took place at Eden Chicago on Monday night. Frank, Jane and I attended this wonderful evening of meeting new people, new restaurants and helping to raise money for Sebastian’s work.

Sebastian is a clinical psychologist who works with young people who might be classified as at-risk, gang-related, and or just struggling with their lives. He uses cooking as a way of healing and therapy for these young people. The farm-to-table process is even stronger than buying food and preparing it. To grow one’s veggies and bring it all from the earth is an amazing process.

Sebastian is trying to share his passion with these troubled youths and give them purpose. He believes that lessons in the culinary arts, or gardening, of being financially responsible mirror the human experience and will provide insights to them. It is his goal to share his knowledge with these young people and provide them with the opportunity to heal and grow. For more info and to donate, visit www.theevolvednetwork.org.

Now back to the evening:

The dining experience included the following restaurants: Prairie Grass Cafe, One Off Hospitality, Eden, Demera, UVAE Kitchen and Wine bar, Vie, Visto Prime, Floriole, Soul & Smoke, Tribecca’s, Antique Taco and Verzenay. It was an amazing evening of great flavors and a night that will help more young people grow.

Eden is a magnificent venue with private dining areas for special occasions and I must say that the dining experiences we had will soon be shared with you as from what we tasted, I know that we will be going back for the full menu. There was a huge crowd last might and yet, everyone felt comfortable and the atmosphere was one filled with love. To cook means to heal, sustain, nurture, connect, challenge, educate, comfort, inspire, care for and of course love. These are the words of Sebastian White and I truly believe that he has the formula for success.
