Here are the two items from today’s show:
Lemonade
Juice of 7 lemons
1 cup raspberries, pureed
1/2 cup to 1 cup sugar
2 quarts of filtered water
Mix all the ingredients taste for sweetness. Serve with ice cubes and slices of lemon
GAZPACHO
3 lbs tomatoes, cored and chopped
1 lb seedless cucumber, peeled and chopped
1 lb onions, peeled and chopped
1 jalapeño, seeded and chopped
2 cloves of garlic crushed
1/4 cup Sherry vinegar
2 red bell peppers, seeded and chopped
1/3 cup extra virgin olive oil
Salt and pepper to taste
Combine all the ingredients and leave in the fridge overnight. Puree all the vegetables add the Sherry vinegar and the extra virgin olive oil and salt and pepper to taste. For a thick gazpacho soak some bread and water squeeze it dry and add to blender with other veggies. Pour into a bowl drizzle with olive oil and topped with finely diced vegetables, garlic crostini or poached crabmeat, lobster or shrimp.
